The fruit of the nutmeg tree resembles the peach and we are taking the pleasure of two valuable spices: nutmeg and mace flowers. The fleshy, red pericarp is yellowish red in drying and comes under the name of mace or nutmeg in the trade. After removing the seed coat, the egg-shaped nuts are soaked in lime water and dried again.
Both spices can be used chopped or grated versatile in small amounts. The necessary quantities should always be prepared just before eating, because the flavor can evaporate quickly.
