Laurel (bay leaves)

This spice is known even to those who have never done one step in a kitchen before, as this and the wreath made out of it used to be the symbol of fame and reputation.
The laurel is an evergreen shrub that grows in Asia and in Mediterranean region. The scent of the huge plantations is already sniffable from far away.
As a spice we use it primarily for soups, stews but it is essential for sauces, gravies, sausages. We can flavor the meat, especially if we give during cooking one or two bay leaves in the juice. This we should cook no longer than 10-15 minutes, otherwise the meat or the food will get bitter. Bay leaves should be removed from all food before serving.
