As a spice we use it primarily for soups, stews but it is essential for sauces, gravies, sausages. We can flavor the meat, especially if we give during cooking one or two bay leaves in the juice. This we should cook no longer than 10-15 minutes, otherwise the meat or the food will get bitter. Bay leaves should be removed from all food before serving.
